Category 12 Brewing has released a wild fermented Farmhouse Ale called the Raw Ale. Brewed with Brettanomyces and Red Cedar this is a west coast twist on a classic style beer. From the 750ml bottle the beer pours a hazy golden-straw colour with three full fingers of head that leave lacing behind on the glass. The aroma is thick with Saison-style yeast tones along side a brett-funk character and mellow wood-spice notes. Tasting the beer, the saison tones are subdued leaving more for the Brett character to come through along side an earthy, wood spice. The Red Cedar comes through with a lighter character and rye-citrus spice that works well with the barnyard like Brett yeast character. This beer is heavy on the wild yeast tones but balanced with traditional saison notes and upped with the use of cedar; a unique, flavourful and strongly flavoured brew from the scientists of BC craft beer, Category 12 Brewing.
